In the heart of the Haymarket, a unique blend of science, philosophy and the aforementioned mysterious elements converges at Alchemy, where the cocktail is more than a cure — it's an experience.
Alchemy, appropriately located inside the iconic Apothecary Building, which was built in the 1880s and housed The Lincoln Drug Company, has been serving cocktails, wine and beer since 2017.
The beginning of 2026 brought changes to Alchemy as Scott and Tracy Johnson took over.
After a 35-year career in the hospitality world, and being fortunate to do what she loved in "elevated resort and restaurant environments," Tracy saw the chance to lead Alchemy as a "no-brainer"— a perfect alignment of her hospitality expertise and a love for world-class spirits.

Tracy's mission is simple: Every drink should reflect craftsmanship, quality and attention to detail. Alchemy is about being passionate, knowledgeable and deeply invested in both the cocktails it serves and the guest experience it creates, she said.
Tracy Johnson and her husband Scott took over Alchemy, which is inside the Apothecary Building in the Haymarket, at the beginning of the year. The couple moved to Lincoln from Colorado to be closer to family.
Johnson recently took time to share her story and the future of Alchemy.
What brought you from Colorado to Lincoln?
When our first grandchild was born, we knew we didn’t want to be grandparents who only saw family a few times a year. Our son Kaleb and his wife had settled in Nebraska, so we chose to move to Lincoln to be closer to them. Lincoln also made sense professionally because my husband works in aviation and Duncan Aviation was a strong fit for his career.
Talk about your professional background before Alchemy?
Before coming to Lincoln, I taught at Colorado Mesa University and served as food and beverage director at Hotel Maverick’s Devil’s Kitchen. Living in Palisade, Colorado — known for its wineries and often compared to a small Napa Valley — deepened my passion for wine and craft cocktails.
How did you first discover Alchemy?
I was introduced to Alchemy through a close friend who handled social media for the business and invited me in for a cocktail. From that first visit, I could tell there was something special about the space. When I learned the previous owner was considering selling, I immediately saw it as an opportunity worth pursuing.
When did you become the owner of Alchemy?
I began working at Alchemy as a bartender in September while the ownership transition was being finalized. That gave me a chance to get to know the staff, guests and culture firsthand. My husband and I officially took ownership in January.
Why did the Haymarket district appeal to you?
When we first visited Lincoln house-hunting, we stayed in the Haymarket and instantly connected with its charm. The preserved historic buildings, vibrant local businesses and welcoming atmosphere stood out right away. More than anything, the kindness and supportiveness of the community made it feel like home.

What is your vision for the Alchemy guest experience?
My focus is creating an elevated, memorable hospitality experience from the moment guests walk in. Whether someone is visiting for the first time or returning after a while, I want them to feel welcomed and cared for.Â
Share five of your favorite bourbons or rye.
That's a tough question.Â
First would be a Colorado straight bourbon from Peach Street Distillery in my hometown of Palisade, Colorado. I really appreciate its smoothness and the unique local character it brings.
Another favorite is Woodford Reserve. I enjoy its balanced profile, especially the creamy finish and the subtle spice notes.
Finally, I’d include Penelope Barrel Strength. It stands out for its smoothness at a higher proof, along with a lingering white pepper spice that stays with you after each sip.
What changes have you introduced since taking over Alchemy?
We’ve enhanced the experience without changing the core identity of Alchemy. That includes adding small bites, improving lighting for a more intimate atmosphere, expanding our wine program and introducing live music on select Thursdays and Saturdays. We’re also launching a happy hour program alongside a new menu in early May.
How does the Haymarket add to Alchemy’s appeal?
The Haymarket is one of Lincoln’s most exciting districts because it blends history, entertainment, dining, sports, nightlife and art all in one place. That energy creates a unique backdrop for Alchemy and makes every visit feel like part of a larger experience.

What do you love most about living in Lincoln now?
Lincoln has truly become home for us. It’s a hidden gem filled with kind, welcoming people and a strong sense of community. Personally and professionally, it has been an incredibly rewarding place to build this next chapter of our lives.
